Creme Brulee. =)


got up this morning before hubs to make a quick dessert. =)
well, i thot he will like creme brulee like i did.
soft creamy and sweet. which however prove too sickening for him. haa.

Here's some quick pictures to it. =)!


I bought these ramekins at Sia huat. Its located at No. 7, 9, 11 Temple Street.



Filled them up with the recipe i believe my readers have received via mail. =)



Coating the baked mixture with an even layer of sugar is important.
You dont want your sugar to be scorched in the centre while the sides remain white and shiny. =)




Caramelised to perfecetion.



Yup, i was very generous with the vanilla beans from the pod this time because i wanted to make for hubby.




I made the coffee ones this time too~
As i have a bit of mixture left so i stir in some coffee granules. Bout 1-2 tbsp.







This is what happen when u have a layer of uneven sugar coating.
-__- u get a side very much scorched while the rest looked almost white.

Pink Polka Dots
That's the cupcakes case my sister bought on impluse during our monthly trip to PhoonHuat.
With no idea of what she can do about it, it was left untouched at a corner in the kitchen.

With Valentine around the corner, the cupcake cases was finally remembered by my sister.
Bake strawberry cupcakes we would.

Wanted to overload this post with pictures but after counting, i realised i might have more than 25 pictures to be uploaded.
Especially when my sister decided to decorate them since Valentine is around the corner.
So to cut things short and sweet and to prevent anyone who might be tired of scrolling through all the unneccessary pictures before reaching the finished products.
I decided to pick the nicer ones out and combine them into one or two thumbnails.
Back to the cupcakes.
Decided to use strawberry jam instead of the fruit itself because the latter is much perishable and its impossible to have all strawberry having the same sweetness level.
Using the jam also meant easier control during the baking as the fruit may released more juices hence causing the cupcake to bake longer(unneccesary because i will end up with a overbake cupcake.)
i used the most versatile cupcake recipe i had and the cupcakes came out successfully.
Of course, i will remember to cut down the sugar as the jam itself prove to be a good sweetener.
=)
Luckily, my sister's friends did find them delicious.
I guess that all i need to hear after a day of baking and decorating.

Double Happiness Cocoa Cookies


Happy Advance New Year everyone!

Hope everyone will be in good health and be happy everyday!

GONG XI GONG XI!

As you can see this is the third type of cookies i will be baking for CNY.
and also, the countless times chocolate has been appeared in my blog. =)


However, to add more oomph into the cookie dough, i added coffee powder into the batter.
hence the coffee and cocoa aroma when baked was heavenly.


Ran out of brown ribbons and had to used the silver one.
Was pretty upset about this but felt better after mum assured me that it will be the content that will keep our family wanting for more.
With the containers i used OOS this year, i was really wondering if i have the time to find the containers to bake another type of cookies.
We'll see then. =)

Soft baked Chocolate Orange cookies


I do realised i have been posting alot of cookies in my blog.
Sorry about the lack of sponge, chiffons or buttercakes or mousse cakes that required me to remove them from the cake rings.
Current kitchen is not well equiped enough handle all things.
And my new and cheap table top oven is too cranky to bake anything that requires delicate baking.
Eg, chiffons and macarons.

(the 20 years old oven my mother-in-law lent me made beautiful macarons for me but sadly, it died within a year after being used by me.. *not my fault*!!)


So continue sticking around, I wouldn't disappoint anyone! I am moving house in another 10 months! OMG. that's so long! but hey i been waiting for the past 3 year already! =S
I will get a built in oven and hopefully there's more ample space in the new kitchen so i can bake with more recipes i am holding now and with better results.

Cornflake Cookies


Since 2009, i was the one supplying the CNY goodies at my grandmothers' house.
Its just another time of the year when i get real busy in the kitchen baking loads of cookies since i am supplying both sides.
Well, its better and cheaper when you bake at home, in bulks and you know the pastries are definately preservative free. What's better is when you know your cousins from 7 to 30 all loves it.

This cookie is so far everyone's favourite because apart from the cookie dough, the cornflake giving another kind of crunch.
Gotta go back to baking! Oven just rang again.!

Prolly the last post of my year 2010.
Work is getting busier and busier.
And i haven been able to bake because of all the OT i have been doing in October.
9-10pm non stop.
Maybe i am getting used to the 8 hour job scoop. But work is work. So baking have to be put aside for awhile!
Yes, i am going on a hiatus till 2011.
Of course, 2011 is going to be a better year.
I will bake more and share my knowledge with everyone.

I wonder if its okay to post this here.

Chicken biscuits. Sound interested?
Sorry to disappoint but its for our four legged friends.!

I took the recipe from the first website i googled on and baked it.
Okay, it looked and tasted nothing like our chicken biscuit.
Its almost tasteless to my tastebuds.

However, my dogs, the 3 of them.
Ate whatever i gave them and the cookies was almost finished within a few days span!

No pictures though because i was too excited to feeding them with the cookie i made for them.
But's here the receipe!


2 cups Whole Wheat Flour
1/2 cup Soy Flour
1/2 cup Rice Flour
1/4 cup Powdered Milk
1 teaspoon Garlic Powder
1 tablespoon Chopped(finely)fresh parsley
1 package Active Dry Yeast
1/4 cup Warm Water
1 cup Chicken Stock (Beef works also)

Glaze:
1 beaten egg mixed with 1 tablespoon Milk <-- this is added upon baking. NOT AFTER baking. Instructions
-Preheat oven to 300 degrees.
-Combine flours, powdered milk, garlic powder and parsley in a large bowl.
-In a small bowl, dissolve yeast in the warm water.
-Stir well and add Chicken Stock.
-Pour liquid mixture into dry ingredients.
-Using your hands, combine all ingredients completely.
-knead several minutes.
-Sprinkle board with additional rice flour and roll out dough to 1/4" thickness.
-Cut with a cookie cutter (or knife) and place on an ungreased cookie sheet.

Vanilla Creme Brulee

The easiest to make of all.
Boil cream/milk and vanilla pod, add sugar, whisk into egg yolks. Strain it. Pour into ramekins or disposable aluminum moulds. Bake them, torch them. EAT THEM.
