AGAR AGAR!

Probably mistaken as the easiest things to do beside baking.
Just because we buy the agar agar powder in a packet, add water and sugar as directed.
Put desired fruits and we have something to munch on after an hour of chilling or so.
WRONG WRONG WRONG WRONG!
That's because often you will end up with a agar agar which is too crunchy- not enough water added
or too limpy to even remove from the already user friendly mould- too much water added.
I had several failed attempt while making this so easy dessert and only after several enlightment from mum did i made my agar agar successfully.
Do remember to drain the fruit thoroughly.
The water from the fruit can affect the texture too. =)
Pour the syrup slowly to avoid air bubbles.!
And once you are ready, chilled them.
Never made them at the very last minutes and put them in the freezer in attempt to set it quickly.

The nostalgic rum balls







I remember when I was young, my grandfather will always fetch me back from my primary school. And everyday, he will bring me to the provision shop and get me a bar of chocolate or maybe just the 3 for 10c sweets.

On days where I'm lucky, my grandfather will bring me to the bakery and I will get to choose a piece of any pastries of my choice.
I will always aim for the cakes with loads of whipped cream and colorful gel. Or sometimes those that come with a plastic toy on top.
One day the bakery auntie put out new things in their cake counter.
It was the huge rum balls!
Waited for the day my grandfather got me one. I can only say disappointment was all over my face. i did finish the huge rum ball though and noted that in my heart I will never ever eat rum balls again.
Now then I'm all grown up, I did tried rum balls from bakeries I have passed by at times and its the same disappointment I get all the time.
Beside the chocolate rice, the innards was just bland and chocolaty. There's no sweet aroma, no body, its like u are eating a piece of chocolate sponge shaped into a ball and the chef forgot all about adding the sugar.
Decided to do one of my own version via combining all the online recipes I can find reliable.
And yes, I am very very pleased with the results and have once sold 5kg of this at a go to a neighbour who ate the rum balls i gave as a good gesture and it became one of cravings during her pregnancy.
What's there to be not happy about when you know people likes the food you made.?
